Konga is the coffee we calibrate our light roasts against. Grown by smallholder members of the Konga Cooperative in the hills south of Yirgacheffe town, it is fully washed and slow-dried on raised beds until the parchment crackles. In the cup it opens with bergamot and stone fruit, then settles into a clean, tea-like finish that keeps pulling you back.

We drop this one under 30 seconds after first crack. Any longer and the bergamot goes quiet.
